HOLIDAY RECIPE | CRANBERRY CREAM CHEESE BREAD
I’ve been experimenting with different holiday recipes ever since you guys requested more of them on my Instagram poll. I ended up making these last week and they were DELICIOUS and super EASY. I baked the bread in small, disposable loaf pans and gave them away to close friends. These would make great gifts for your co-workers, friends or family this Holiday season! You could even freeze them and take them with you to any Holiday events you may have coming up or pull them out if you’re hosting company. Either way, they are sure to be a hit! Enjoy!! XOXO
Cranberry Cream Cheese Bread
2 cups flour
2 cups cranberries
1 1/2 cups sugar
2 sticks unsalted butter
1 (8 oz.) package of cream cheese
4 eggs
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Combine butter, cream cheese and sugar into a large bowl or mixer. Then, one at a time, beat in the eggs and vanilla. In a separate bowl, whisk together flour, baking soda and salt. Gradually mix dry ingredients into the wet ingredients. Gently fold in the cranberries. Bake in greased loaf pan at 350° for 60 to 70 minutes or until tooth pick inserted into center comes out clean. Cool in pan for 15 minutes and remove to wire rack.
BAKING TIP: Putting a cookie sheet under the loaf pans makes it so much easier to pull in and out of the oven!
